1 cup of chunky or smooth peanut butter
3/4 cup packed brown sugar
1 large egg
3/4 tsp. baking soda
Heat Oven to 350. Line two cookie sheets with parchment paper. ( I used my silicone pads)
Using an electric mixer beat all ingredients in large bowl until fully incorporated.
Drop by level teaspoonfuls of dough onto the prepared baking sheets spacing them 1 1/2in. apart.. ( I used one of those fancy cookie scoops), ( I also took a fork and pressed down one way and then the next way) Bake until cookies are puffed and starting to turn slightly brown around the edges for 8-10 minutes.. Let cool on sheets for 5 minutes then transfer to a wire rack to cool completely.
Makes about 5 dozen ( I only got 4 dozen from a double batch)
(Maybe they make a smaller cookie scoop I don’t know but either way this is my new favorite recipe.) A big thank you to my friend Betty Stark for this recipe.
Now does anyone have a good recipe for soft oatmeal raisin cookies that won’t fall apart?
